Homemade Salsa


I made homemade salsa as an appetizer for my family before my brother's football game. It turned out pretty good, but it wasn't very hot - I would probably characterize it as mild. Add more crushed red pepper flakes to make it hotter.

Ingredients:

2 tomatoes, diced into small pieces
1/2 - 3/4 can corn, drained
1 small red or purple onion, diced
1/3 cup lime juice
1/8 cup EVOO
1 1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 cup cilantro
1/8 cup chopped parsley flakes
3 cloves garlic, minced
1/2 teaspoon salt
3/4 teaspoon crushed red pepper flakes
Optional: 1 can black beans, drained

Directions:
Mix all ingredients together and chill over night.

Serve with tortilla chips.
